I’ve had a long day at work and a to do list that is a mile long waiting for me to complete when I get home. Sound familiar? On days like this, I find myself tempted to go through the closest drive though to make one thing on my list easy, dinner. Dinner is something that’s pretty important to me. It’s a time for the family to be together for at least a few minutes of the day.
If it were up to my son, we’d have pizza every night in front of the TV. If it were up to me, we’d have a tasty, well balanced and nutritious meal with all of us together at the table. In this “perfect” world my kitchen would be a self cleaning kitchen too!
I was determined to not let tonight be a fast food night. Pinterest to the rescue! I found a pin for Sesame Salmon Burgers with Dill Yogurt Sauce from Andie at canyoustayfordinner.com.
Have you ever seen the show Semi-Homemade on Food Network? The premise of it is to use some pre-made ingredients in recipes to make them easier to prepare. Like using a store bought roasted chicken to make chicken salad instead of cooking the chicken yourself. I took the Semi-Homemade approach to this recipe.
I had some frozen salmon patties in the freezer from Costco. ( I love that place)
And I decided to spruce them up a bit with the dill yogurt sauce from the recipe. It only needed 4 ingredients: dill, Greek yogurt, garlic and lemon juice. I used my iPhone Pinerest App to pull up the recipe while I was in the grocery store buying the ingredients. It made it so easy to make sure I got everything I needed!
We grilled up the patties and toasted the buns and voila! A semi-homemade dinner.
It isn’t a 4 course meal but with a side of veggies it wasn’t too bad. I felt a little more like a June Cleaver mom and a little less like a Peggy Bundy mom making something semi-homemade. What’s most important is that we were together.
I rate this Pinterest inspired project……
It was quick and easy. The ingredients were easy to find and best of all it tasted good! The sauce was pretty tangy and went well with the salmon. The only thing I’d recommend is to make sure that the garlic is finely minced. My pieces were a little too big.
On a day with more time, I’d like to try the whole recipe and make the salmon patties from scratch too.
