One of my very first pins was a recipe I found for lasagna soup. It sounded interesting and was referred to as low calorie. Well, That was right up my alley! I love pasta and low calorie too?? what more could a girl ask for. I guess I could ask my imaginary personal chef who looks just like Ryan Reynolds to feed it to me while vacationing on my private island. Hmmmm….. Oh yeah, back to reality! Well, I gave it a shot despite the absence of Ryan and no beach in sight.
The ingredients were really common stuff. The hubby was able to easily find what I didn’t have in the pantry at our local Wally World. I hate when I find a recipe that looks yummy and I haven’t even heard of most of the ingredients much less where to find them. Don’t You?
Drum roll please……… It was a Success!!!! Thumbs up from the entire family (that rarely happens here). My hubby even asked me to make it again. In the words of the infamous Martha Stewart,”it’s a good thing”. I served the leftovers for lunch the next day. It had thickened up a bit so I added a bit more chicken broth and it was fine.
The next time I make it I’ll tweak it by adding some Italian seasoning, zucchini and maybe some mushrooms. What have you brought off the Pinterest boards lately?
